Understanding Fermentation Safety
People are scared of getting sick from fermented food, but what they're
actually worried about isn't how this works.
Botulism doesn't just randomly show up.
It needs a very specific environment.
That's why you hear about it in improperly canned food.
Fermentation works differently.
You salt vegetables, you keep them under water,
and within a day
or two, acid starts building. The environment becomes too
acidic for botulism to grow. What actually causes
problems? Stuff not submerged and bad process,
not fermentation itself. If it bubbles, smells sour,
brine gets cloudy, that's exactly what you want.
